750ml bottle Balance Boldly Brut Sparkling Wine
1 strip lemon zest
Mix lemon zest, blueberries and brandy in a jar and seal tightly. Let it rest in a cool dark place for about a month until the mixture has turned a dark purple colour.
Strain mixture through cheesecloth into a pitcher or large bowl and add simple syrup to taste.
Chill until cold, about 30 minutes.
Pour 30ml of the cordial into a flute then top with Balance Sparkling Brut.
