750ml Balance Winemaker’s Selection Pinotage
2 Cinnamon Sticks
Pinch of Ground Mixed spice
15 ml Brandy
Add the Pinotage, sugar, cinnamon, cloves, mixed spice in a saucepan and over medium heat stir the ingredients until the sugar has dissolved.
Add the brandy and turn heat until boiling point.
Take a vegetable peeler and rind the orange until the zest/skin of the orange peels off, squeeze out the remainder juice and add to the hot wine mixture.
Let the mixture simmer over low heat for about an hour.
Strain the mixture, to leave all the spices and pieces of orange behind, pour into a flask and keep warm.
