Peach Mojito Cocktail

60 ml Balance Winemaker’s Selection Chenin Blanc

1 ripe peach, skin removed and sliced

10 mint leaves

Juice of 1 lime

1/2 cup pineapple juice

Club soda, chilled

pineapple slices for garnish

 

Divide the peach slices, mint leaves, lime juice and 1/4 cup pineapple juice between two glasses.

Use a muddler or spoon to crush the peaches and mint leaves to release the mint oils and juice from the peach.

Divide Chenin Blanc between glasses.

Fill the glass with ice cubes and top with remaining pineapple juice and club soda.

Garnish with pineapple slices.
